dc.description	The objective of this research is to propose management strategies for the optimization of costs in gourmet restaurants in the municipality of San Cristóbal, Táchira state, Venezuela. The work is based on the positivist paradigm supported by a quantitative study, with a descriptive level focused under the feasible project modality and supported by a field study. Two questionnaires were applied, the first one to a sample of 87 restaurant managers and another survey to a sample of 272 restaurant customers. The results reveal that gourmet restaurants have competitive advantages in the market in terms of the application of strategic postulates and the development of policies regarding the acquisition, maintenance and conservation of raw materials and supplies, among others. In terms of weaknesses, the restaurants do not have an adequate cost structure management and inventory control and coding system. Therefore, it is necessary to apply indicators that allow gourmet restaurants to structure their costs, according to the parameters required by the sector, in order to have real costs, in order to establish prices in accordance with the profit margins typified in Venezuelan laws. This work provides some strategies that will allow gourmet restaurants to optimize costs in order to offer quality products at affordable prices to the consumer.	en-US
dc.description	La presente investigación tiene como objetivo proponer estrategias gerenciales para la optimización de los costos en los restaurantes gourmet del municipio San Cristóbal del estado Táchira, Venezuela. El trabajo se fundamenta en el paradigma positivista apoyado en un estudio cuantitativo, con un nivel descriptivo enfocado bajo la modalidad de proyecto factible y apoyado en un estudio de campo. Se aplican dos cuestionarios, el primero a una muestra compuesta por 87 gerentes de restaurantes y otra encuesta para una muestra de 272 clientes de los restaurantes. Los resultados revelan que los restaurantes gourmet tienen ventajas competitivas en el mercado en cuanto a la aplicación de postulados estratégicos y el desarrollos de políticas en cuanto a la de adquisición, mantenimiento y conservación de materias primas e insumos, entre otros. En cuanto a las debilidades, los restaurantes no cuentan con un adecuado manejo de la estructura de costos y un sistema de codificación y control de inventarios. Por lo tanto, es necesario aplicar indicadores que permitan a los restaurantes gourmet estructurar sus costos, acorde con los parámetros exigidos por el sector, de cara a tener unos costos reales, a fin de establecer precios acorde con los márgenes de ganancias tipificados en las leyes Venezolanas. Este trabajo aporta algunas estrategias, que permitirán a los restaurantes gourmet optimizar los costos, con el objeto de ofrecer productos de calidad a precios asequibles al consumidor.	es-ES
